骨付き鶏肉を煮込むのはいつものやり方。
醤油とみりん、砂糖を入れて煮込む。
今回はスミティさんから送ってもらったローズマリーを一緒に入れて煮込んだ。
煮込み時間はいつも長い。今回も２時間半。
この間、お花見のときスペアリブのローズマリーに込みを持って行った。
評判が良くてローズマリーの効果を再確認。
今回は、いつもの骨付き鶏肉でつくる。
おいしいんだけれど、スペアリブの方が香りが残るのかなあ。

美味しそうですね。ローズマリー、肉にも魚にもあいますね。私はローズマリーの他にタイ
ム・セージも使います。和風煮込みの砂糖の代わりに、マーマレードとか、蜂蜜、メイプルシ
ロップも使えますよ～。そういう風味がでます。油はオリーブオイルです。豚肉のほうが風味
がついたのは、豚肉の脂に風味がつくからです。オリーブオイルにハーブの風味がつきます
よ。

油に風味が付くんですか！
気がしただけじゃなかったんですね。
マーマレードは使います。作るから。でも、砂糖の代わりに使うって知らなかったんです。
味付けは醤油とみりんと砂糖だったんですが、醤油とマーマレード、とか醤油と蜂蜜でいい
んですね。
考え方がわかりました。

みりんにはアルコール分があるのでそれを補うには、料理酒か白ワイン（よくワインを飲む人
なら、残り物があるでしょう） 白ワインの代わりに（ほとんど飲まない私のような者は）
シェリー酒。シェリー酒は長くおいても悪くならないんですよ。

お酒の知識はほとんどありません。シェリー酒って初めて聞きました。
どこに売ってるんだろう。
スーパーにある料理酒とは違うんですよね。

シェリー酒って本当はすごくいいお酒なんです。だからスーパーの洋酒売り場くらいじゃ
売ってなくて・・・・あ、でも新宿だもんね。
ピンからキリまであるみたいだけど、料理に使うわけだから、安いので・・・・
あんなに立派なローズマリー、オリーブオイルの小瓶にそのままいれたら、ローズマリーオ
イルになりますよ。
